Homemade Beef Vegetable Soup

Made a big batch of homemade beef vegetable soup. Cooked in my big roaster. When making soups it is very hard not to make a large amount! Have $20 in the ingredients and had enough to serve 12-20 people depending on the serving size. We like a large bowl of soup!



Used a piece of bottom round and also a beef soup bone I had. Seared off beef in cast iron pan and put in roaster. Added can of diced tomatoes and an array of veggies...onions, celery, cabbage, diced potatoes, 2 bags of mixed veggies that included green beans, carrots, peas and lima beans. Also added one can of kidney beans. Cooked at 300 for 4 hours.


 

Removed beef from soup, shredded and added back in soup. Served with unsalted crackers.
