Easy Cajun Fish chowder

Easy and quick Cajun Fish chowder. Here is the link to the recipe video.

This is a quick and easy Fish chowder soup. Filled with haddock, clams, potatoes and corn. Seasoned with Cajun seasonings to give it that richness and punch!

Easy  Cajun Fish Chowder Soup
INGREDIENTS
2 pounds bite size haddock (or a fish or seafood of your choice)
6.5 ounce can chopped clams and juice
8 cups water / vegetable/ seafood/ chicken broth
1 can of cream of shrimp
1 cup milk - can use cream or half and half
1 cup chopped  onion
1 cup frozen corn
1 1/2 cups chopped red potatoes
1/2 cup chopped red bell pepper
1 seeded and finely chopped jalapeno
zest of lemon
salt and pepper
1 tsp minced garlic
1 tsp Cajun spice
1 tsp thyme
1 bay leaf
3 tbsp flour

In soup pot add 2 tbsp of oil on medium heat.
Add onions and bell pepper. Stir and cook for
1-2 minutes and then add jalapeno pepper.
Stir and cook for 2-3 more minutes until veggies
are tender.

Add corn, minced garlic, s&p and lemon zest.
Stir and cook for 2-3 minutes. Add thyme and
stir.

Next add flour. Stir and cook for 2 minutes to
get rid of the flour taste.
Slowly start adding your water. The broth will
form and thicken slightly.

Add milk and cream of shrimp. Stir.

Add bay leaf and Cajun seasonings. Stir.

Stir and bring up to heat and simmer for
10 minutes.

Add potatoes and cook for 15-20 minutes until
potatoes are tender.

At the last 5 minutes add clams, clam juice and
fish. Cook for 5-8 minutes or until fish is done.

Garnish with finely minced red bell peppers,
jalapenos and some lemon zest.

A hearty and filling meal..
