How to make Baked Extra Creamy Macaroni and Cheese
INGREDIENTS:
1 pound of Cellentani or elbow macaroni pasta
4 cups of half and half or milk or cream
1 can of evaporated milk
2.5 pound package of Velveeta cheese - grate 1/3
1 pound of Monterey Jack cheese - grate 1/3
1 pound of Mozzarella cheese - grate 1/3
1/2 stick butter
1/4 cup flour
1/2 cup sour cream
salt and white pepper to taste
pinch cayenne pepper - optional
couple grates of nutmeg
Preheat oven to 350 degrees
Cook pasta for 5 minutes, drain and place in baking
dish.
In sauce pan on medium heat, add butter and flour.
Stir and cook for 1-2 minutes. Slowly add half and half
and evaporated milk.
Turn heat up to med high and stir. It will start to
thicken.
Add spices and stir. Once thickened turn off the heat
and add 3/4 of cheese. Stir until melted.
Pour cheese mixture over pasta and stir well.
Add sour cream and stir.
Add rest of cheese on top.
Bake at 350 degrees for 45-50 minutes until top is
golden brown and cheese is bubbly.
Remove and let rest for 15-20 minutes before serving.
