How to Make Chicken Barley Soup ~ Power Souping!
INGREDIENTS:
2 cups cooked cubed chicken
10 cups chicken broth
1 cup diced onions
1 cup diced celery
1 cup diced carrots
1 cup diced plum tomatoes
1 cup sliced mushrooms
1 cup medium pearled barley
1 tsp. minced garlic
1 tsp. dried parsley
1 tsp. dried thyme
1 tsp. dried marjoram
1 tsp. savory - or poultry seasoning or sage
salt and black pepper
oil
In a soup pan on medium heat add oil, onions,
celery, carrots and salt and black pepper.
Cook and stir for 3-4 minutes.
Add mushrooms and tomatoes. Stir and cook for
2-3 more minutes.
Add minced garlic, parsley, thyme, marjoram and
savory. Stir and cook for one minute.
Add chicken broth. Bring up to a simmer.
Add barley and stir. Partially cover and cook
for 40-50 minutes stirring occasionally.
Taste for any additional seasonings.
Add cooked chicken, stir and cook for 10 more
minutes.
Enjoy.
