Chinese Spicy Shrimp Stir Fry
Shrimp Marinade:
1 pound clean shrimp
pinch of salt
1 tbsp. Shaoxing wine vinegar
2 tsp. cornstarch
*Mix together
Sauce:
1/2 cup water
1/4 cup ketchup
1 tbsp. soy sauce
1 tbsp. Shaoxing wine vinegar or rice wine vinegar
2 tbsp. chili oil
1 tbsp. sugar
1 tbsp. cornstarch
*Mix together
1 1/2 cups snow peas
1 cup mushrooms - I used Beech mushrooms
1 1/2 cups bell peppers
6 green onions - white and greens separated
3-4 chopped red chillies
1 tbsp. minced garlic
oil
In a pan or wok on medium high heat add some oil and shrimp. Cook and stir for 3-4 minutes or until done. Remove from pan.
Lightly wipe out pan/wok, add oil, minced garlic and red chillies. Cook and stir for 30 seconds.
Add in bell peppers, mushrooms, white onions and snow peas. Cook and stir for 3-4 minutes.
Add shrimp back into pan/wok, sauce and green onions. Cook and stir for a minute or until the sauce thickens and everything is coated..
Serve immediately. Enjoy.
