Chinese Chicken & Shrimp Stir Fry with BBQ Plum Sauce Recipe



We just love Chinese stir frys and this Chinese chicken and shrimp stir fry with a BBQ plum sauce recipe is up there as one of our favorites. The Chinese plum sauce really adds a lot of flavor and punch to this stir fry. The chicken I velveted for a soft exterior and tender meat and the shrimp I simply cooked in a little butter and garlic. This is a delicious Chinese stir fry and most of the ingredients you will be able to find at most major grocery stores like Walmart. Asian Recipes by Tess Cooks4u https://www.youtube.com/watch?v=-YIct... ***************************************** Chinese Chicken & Shrimp Stir Fry with Chinese BBQ Plum Sauce INGREDIENTS: 1/2 pound cooked shrimp 1/2 pound sliced cooked chicken ~ I velveted my chicken 1 small diced onion 1 cup diced bell pepper 2 sliced carrots 1 small can rinsed and drained small corns 1 small can sliced water chestnuts oil butter salt and black pepper Chicken marinade: 1/2 pd. Boneless chicken breast sliced thinly 2 tbsp. soy sauce 2 tsp. rice wine 1 large egg white 1 1/2 tbsp. cornstarch *Combine above ingredients and let set for 5-10 minutes. Bring a pot of water near to a simmer. Drop in chicken pieces. They will drop to the bottom. Once you add in all the pieces give them a gentle push 2-3 times so they do not stick together. Let cook (poach) for 2-3 minutes (depends on size of chicken pieces) or until chicken is done. Remove from the pan with slotted spoon and let drain in collander until ready to add to stir fry. SAUCE: 1/2 cup plum sauce 2 tbsp. light soy sauce 1 tbsp. hoison sauce 2 tbsp. ketchup 1 tbsp. brown sugar 1/8 tsp. five spice powder *Mix above ingredients In a wok or skillet on med high heat add oil, minced garlic and ginger. Cook and stir for 15 seconds and then add onions, carrots, bell peppers, water chestnuts and baby corn. Cook and stir for 4-5 minutes or until the vegetables start to become tender. Add cooked chicken, shrimp and sauce to the vegetables. Cook and stir for 1-2 minutes. Serve with steamed jasmine rice.
