Spicy Chinese Chicken and Zucchini Stir Fry Recipe
If you like spicy...you are going to love this SPICY Chinese Chicken and Zucchini stir fry recipe. Chicken is moist and has a nice coating and the zucchini absorbs all that lovely sauce. Spicy Chinese Chicken & Zucchini Stir Fry Recipe
INGREDIENTS:
1 pound cubed boneless chicken breast
1/4 tsp. salt
1 egg white
3-4 tbsp. cornstarch
*Mix above ingredients well
Fry chicken in batches for 3-4 minutes or until golden brown.
Drain on paper towel.
SAUCE:
3/4 cup water or broth
2 tbsp. light soy sauce
2 tbsp. oyster sauce
2 tbsp. garlic chili sauce
1 tbsp. sugar
2 tsp. cornstarch
*Mix above ingredients well
2 sliced carrots
2 sliced celery stalks
4 green onions - whites and greens separated
1 small zucchini or about 2 cups diced
4-5 cloves sliced garlic
oil
In a wok or deep skillet on medium high heat add oil, garlic, carrots, celery and the whites of the garden onions.
Cook and stir for 2-3 minutes.
Add zucchini, cook and stir another 2 minutes.
Add sauce and bring up to a boil and cook for 30 seconds.
Add cooked chicken into wok, stir to get chicken thoroughly coated and its ready!
Serving with steamed jasmine rice. Enjoy.
