Easy Baked Chicken and Rice Casserole Recipe ~ ONE PAN!



This is an easy delicious budget friendly chicken dinner. Tonight I made a yummy chicken and rice casserole. Seasoned perfectly with lots of flavor. Will feed a hungry family. Enjoy. #chickenrice #chickencasserole #tesscooks4u #chickendinner #recipes #cooking #food Easy Chicken Thigh Rice Casserole Bake Recipe INGREDIENTS: 5-6 bone in skinless chicken thigh 2 tbsp. oil 1 tsp. Adobo seasoning 1/4 tsp. white pepper 1/8 tsp. cayenne pepper 1/2 tsp. garlic powder 1/2 tsp. onion powder 1/2 tsp. thyme 1 tsp. paprika *Mix well so chicken is coated. Marinate for a minimum of 1 hour 1 1/2 cups long grain or jasmine rice - rinsed and drained 3 cups chicken broth 1 cup diced onions 1/2 cup diced red bell pepper 4-5 cloves minced garlic 3 tbsp. melted butter 1/4 tsp. white pepper 1/4 tsp. garlic powder 1/4 tsp. onion powder 1/3 tsp. celery salt Place diced onions, bell peppers, minced garlic, seasonings and melted butter on bottom of baking dish. Toss well. Sprinkle rice over mixture. Top with marinated chicken. Pour broth between chicken pieces into rice. Bake covered at 375 degrees Farenheit for 30 minutes. Uncover and bake another 20-30 minutes. Remove from oven and let rest for 5 minutes. Remove chicken from casserole, cover and rest. Cover rice and let rest for another 5 minutes. Fluff with spoon.
