How to Make Curry Turkey Soup ~ Leftover Turkey Recipe
INGREDIENTS:
1 to 1 1/2 pounds cubed turkey
1 cup diced onion
1 cup diced celery
1 cup diced carrots
1 cup corn
1 seeded finely diced jalapeno - optional
6 cups chicken broth/turkey broth/vegetable broth
1/2 cup coconut milk / cream or half and half
3 minced cloves garlic
1-2 bay leaves
4 tsp curry
1 tsp turmeric
salt and black pepper
oil or butter
If you don't have leftover turkey or chicken,
cook meat in a little oil with salt and pepper
until done. Remove and set to the side.
In a pan on medium heat add a couple tbsp. oil,
onions, celery, carrots and salt and black pepper.
Stir and cook for 2-3 minutes..
Add corn or other vegetables of your choice.
Stir and cook for another minute.
Add jalapeno, garlic and spices. Stir and cook for
one minute.
Slowly add broth and 2 bay leaves.
Turn up heat to bring to simmer.
Add rice and stir. Turn heat to low, cover and
cook for 20 minutes.
Add turkey/chicken into soup. Stir and cook for
a couple minutes. Remove bay leaves.
Add coconut milk, stir and cook for one minute.
Ready to serve.
