The Best Homemade Beef Vegetable Soup ~ Power Soup Recipe

INGREDIENTS:
3-5 pound beef roast - I used a chuck roast
2 cups beef broth
8 cups water
1 29oz can diced tomatoes
1 large diced onion
2-3 diced celery stalks
1 cup diced carrots
2 cups diced cabbage
1 bag corn
1 bag peas
1 bag lima beans
2 cups diced fresh green beans
2 cups diced potatoes
1 small can white beans or kidney beans
1 tsp. minced garlic
1 tsp. thyme
1/4 cup chopped parsley or 1 tsp. dried parsley
2 bay leaves
salt and black pepper
oil for searing

Preheat oven to 325 degrees
Season beef roast with salt and black pepper on
both sides. Sear in med high pan on both sides
for 2-3 minutes. Place in soup pot or roasting
pan.
Bake 2 1/2 to 3 hours until meat is almost fork
tender and then add beans/potatoes and bake for
another 30 minutes.
Remove from oven. Remove beef roast and let
rest for 15 minutes. Shred beef and return
to pan. Stir until combined.
Enjoy.
