How to Make Tex Mex Corn Side Dish Recipe
INGREDIENTS:
2 cups or 2 cobs of cut cooked corn
1/4 cup diced onions
1/4 cup diced bell peppers
1 small seeded diced jalapeno pepper
1 small can green chilis
1 can Rotelle or diced tomatoes
2-3 cloves minced garlic
salt and black pepper
1 tbsp. oil
In a sauce pan on medium heat add oil, onions and bell peppers.
Stir and cook for one minute.
Add jalapeno pepper, minced garlic and salt and black pepper.
Stir and cook for 3 minutes or until veggies are tender.
Add green chilies and Rotelle.
Stir and bring up to a boil. Reduce heat and simmer for 1-2 minutes.
Add corn, stir and cook for one minute or until corn is heated
through.
Enjoy.
