Easy Healthy Vegetarian Chinese Mushroom Stir Fry
INGREDIENTS:
10-12 oz fresh bella or button mushrooms - halved/ quartered / sliced
5-7 shitake mushrooms - rehydrated and sliced
1 medium diced onion
1 small diced red bell pepper
2 cups cubed fresh pineapple
olive oil
SAUCE:
3 tbsp. water
2 tsbp. light soy sauce
1 tbsp. sesame oil
2 tbsp. sweet chili sauce
1 tbsp. ketchup
2 tsp. minced garlic
1 tsp. minced ginger
In a pan or wok on medium heat add olive oil and mushrooms.
Cook and stir for 4-5 minutes.
Add diced onions and bell peppers. Cook and stir for 2-3 minutes.
Add pineapple. Cook and stir for 2-3 minutes.
Add sauce, cook and stir for 1-2 minutes.
Enjoy.
