Italian seasonings 1 tsp. oregano 1 tsp. garlic powder 1 tsp. onion powder 1 tbsp. Worcestershire sauce 1 tsbp. ketchup 1/4 cup fresh chopped parsley 1/4 tsp. salt 1/4 tsp. black pepper *Mix above ingredients well. Refrigerate for 30 minutes before forming balls. Form meatballs 1-2" diamter - about size of golfball. Place on baking sheet. Bake at 400 degrees F for 10-15 minutes depending on the size of the balls. Mine took 15 minutes. Sauce: 1 medium diced onion 1 cup diced mushrooms 1/2 cup diced red bell pepper 2 cups baby spinach 4-5 cloves minced garlic 2 tbsp. butter 2 tbsp. extra virgin olive oil 2 tbsp. flour 2 cups whole milk 1 cup cream salt and black pepper In a pan on medium heat add butter, EVOO, onions, mushrooms and bell peppers. Cook and stir for 3-4 minutes. Add salt, black pepper and minced garlic. Cook and stir for another minute. Add flour, cook and stir for 1 minute. Add milk, cook and stir until starts to thicken. Add cream and bring up to a simmer. Add spinach, stir. Add meatballs and gently stir to get meatballs coated. Simmer and cook for 15 minutes. Serve over pasta, rice or potatoes.
