Beef Empanadas Recipe
INGREDIENTS:
1 pound ground beef
Empanada pastry dough discs - I used Goya
oil for frying
1 small finely diced onion
1 small finely diced bell pepper
3 cloves minced garlic
salt and black pepper
1/2 cup sliced olives
1 cup tomato sauce
1 tsp. Adobo seasoning
1 tsp. onion powder
1 tsp. paprika
1 tsp. chili powder
1 tsp. cilantro
1 tsp. oregano
1 tsp. cumin
In a pan on medium heat add ground beef. Cook, stir and chop until browned. Drain excess fat if needed.
Add diced onions and bell peppers and cook for a couple minutes.
Add minced garlic, salt and black pepper and cook for an additional minute.
Add sliced olives and tomato sauce and stir.
Add spices, stir and let simmer for a couple minutes and then remove from heat and let cool.
Add a good spoon full of meat mixture in middle of empanada dough.
Fold over and press edges with fingers.
Take fork and press down along edge front and back to completely seal.
Heat oil to 350 degrees F. Add a couple empanadas and don't over crowd the pan.
Let cook for 3-4 minutes gently turning so they cook evenly.
Once golden brown, remove from heat and place on a wire rack to drain.
Enjoy.
