The BEST Mongolian Beef Stir Fry Recipe
INGREDIENTS:
1 pd. sliced beef (approx 1/8" thick and cut against grain)
1 tsp. rice vinegar
1 egg
3 tbsp. cornstarch
*Mix above ingredients and let marinate for 10-15 minutes.
Fry in oil for 1-2 minutes or until the beef forms a light brown crust.
Do not overcook the beef. Remove and drain on paper towel.
6-8 garden onions - greens and whites separated - whites cut in half - approx 2-3" pieces
5-7 red chili peppers - optional
6-8 cloves minced garlic
1 tsp. minced ginger
oil for frying - I use peanut oil
Sauce:
1/4 cup water
1/4 cup light soy sauce
1/4 cup lightly packed brown sugar - you can adjust to your liking
*Mix above ingredients
In a pan on medium heat add oil, minced garlic and ginger.
Cook and stir for 15-20 seconds.
Add sauce, turn up heat to high to bring to simmer, reduce to medium high and simmer for 2 minutes.
Add cooked beef, red chili peppers (or paste or flakes - optional) and whites of garden onions.
Cook and stir for 30 seconds to 1 minute...just until beef is coated.
Add greens of garden onions.
Cook and stir for additional 30 seconds to 1 minute.
Serve and enjoy.
