How To Make The BEST Chicken Marsala
INGREDIENTS:
2 chicken breasts or cutlets - you can pound chicken to 1/4" thickness
Dredging:
1 cup all purpose flour
1/2 tsp. salt
1/2 tsp. black pepper
10 oz sliced Cremini mushrooms
1/2 cup diced onion or shallots
3 cloves sliced/minced garlic
1 cup Marsala wine
1 to 1 1/2 cups mushroom broth or chicken broth
1/4 cup fresh chopped parsley
2 tbsp. cold unsalted butter
salt and black pepper to taste
3-4 tbsp. olive oil
Mushroom Broth
*Place mushroom stems in 2 cups of water. Bring to simmer and cook for 15-20 minutes.
In a deep skillet on medium to medium high heat add oil and chicken.
Cook on each side for 2-3 minutes or until golden crust forms.
Remove from pan and set to side.
In same skillet on medium heat add onions, mushrooms, garlic, salt and black pepper. Cook and stir for 5-7 minutes or until moisture is mostly absorbed.
Add Marsala wine and simmer for a couple minutes.
Add mushroom (or chicken) broth, bring to simmer.
Add chicken and juices back into the pan and bring to simmer.
Cook for another 2-5 minutes depending on thickness of chicken.
Baste with sauce while cooking.
Add parsley and cold butter. Stir and cook for another minute.
Serve with potatoes, noodles, rice or vegetable.
Enjoy.
