Copycat Panda Express MUSHROOM CHICKEN Zucchini Stir Fry Restaurant Recipe
INGREDIENTS:
1 to 1 1/2 pounds cubed boneless chicken thighs
1 package button mushrooms - cleaned and quartered
1 1/2 cups sliced zucchini
1 tbsp. minced garlic
1 tbsp. minced ginger
slurry - 1 tbsp. cornstarch and 2 tbsp. water
Chicken marinade:
2 tbsp. light soy sauce
1 tbsp. Chinese cooking wine
1 tbsp. sesame oil
2 tbsp. cornstarch
*Mix with chicken and let marinate for 30 minutes
Sauce:
1/2 cup chicken broth or water - I added 1/4 tsp. Better Than Bouillon Chicken to 1/2 cup water
1/4 cup light soy sauce
2 tbsp. oyster sauce
1 tbsp. Chinese cooking wine or rice wine vinegar
1 tbsp. brown sugar
