How To Make Refreshing Cold BLUEBERRY SOUP Recipe
INGREDIENTS:
2 cups fresh blueberries - rinsed and drained
1/2 cup fresh squeezed orange juice
1/4 cup sugar
1/4 tsp. nutmeg
1 tbsp. fresh lemon juice
1 cup cold half and half
Mint leaves, blueberries, orange slices and zest for garnish
Makes 2-4 servings depending on serving size.
You can double the recipe.
In a sauce pan on medium heat add berries, sugar, orange juice and nutmeg.
Cook, stir and bring up to a boil.
Simmer one minute, remove from heat and let cool.
Add blueberry mixture to blender along with tbsp. lemon juice.
Blend until smooth.
Refrigerate until completely chilled.
Right before serving add cold half and half and mix well.
Garnish as you wish.
Enjoy.
