INGREDIENTS:
2 pounds cubed bite size russet potatoes or any other potato - cooked to fork tender
salt and black pepper to taste

Sauce:
1/2 cup mayonnaise
1/4 cup basil pesto
1 tbsp. Dijon or prepared mustard
1/4 cup very thinly sliced red onion
1 tbsp. chopped capers
juice of a lime
*Mix above ingredients well
