How to Pan Sear PERFECT SEA SCALLOPS with Lemon Garlic Butter Sauce INGREDIENTS: 1 pound scallops cleaned, drained and dried Season both sides with kosher salt and black pepper Oil for pan 4 tbsp. butter juice of two lemons 2 sliced cloves garlic 1 tsp. dried parsley salt and black pepper In non stick skillet on medium high heat (8) add 1/4 cup oil and coat bottom of pan. Add seasoned scallops to pan starting clockwise. Let them cook for about 2 minutes or until you see the bottom edges start to turn golden brown. Keep an eye on them. You want the scallop to form a nice deep golden crust and when it is ready it will release from the pan freely.. Turn and cook another 1-2 minutes and then remove from the pan. In the same pan on medium heat add 2 tbsp. butter and 2 sliced cloves of garlic. Cook and stir for 1-2 minutes. Add juice of 2 lemons, parsley, salt and black pepper. Cook and bring up to a simmer while scraping tidbits from bottom of pan. Once sauce comes together add another tbsp. cold butter. Stir in butter and remove from heat. Spoon sauce over cooked scallops. Enjoy.
