How to Make a Southern Peach Cake Recipe INGREDIENTS: 2 cups flour 1 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 3 eggs 1 3/4 cup sugar 1 cup vegetable oil 2 cups fresh diced peaches 1/2 cup chopped pecans or almonds for the top Simple icing: 1/2 cup confectioner's sugar and 1-3 tsp. milk (add gradually and stir) Greased 9x13 pan Bake 375 degrees Farenheit for 50 minutes Mix dry ingredients and sift: flour, salt, baking soda and cinnamon Cream together eggs and sugar. Add oil and mix well. Add sifted dry ingredients to wet ingredients in two batches and mixing well in between. Fold in diced peaches. Pour batter into greased baking pan. Layer sliced peaches down middle - optional. Sprinkle top with sliced almonds. Bake at 375 degrees Farenheit for 50 minutes or until toothpick inserted in middle comes out clean. Cool completely and drizzle with simple icing. Store in a cool temp. Enjoy.
