Healing Chinese Chicken Soup Stir Fry INGREDIENTS: 3-4 cups chicken broth - homemade or low sodium boxed 1 tsp. minced ginger 2 cloves sliced garlic 2 tbsp. Shao Hsing cooking wine 1 tsp. light soy sauce 1 tsp. sesame oil pinch of salt 1/8 tsp. white pepper 1 tsp. sugar slurry - 1 tbsp. cornstarch and 2 tbsp. water 1 small diced onion 2 small diced carrots 2 diced stalks of celery about dozen broccoli florets 1 cup diced yellow squash 2 chopped garden onions INGREDIENTS: 1 large boneless chicken breast cut into thin slices 2 tbsp. cornstarch 1 egg white pinch of salt *Mix above ingredients and let set for 10 minutes. Bring pot of water up to almost a boil. Add chicken pieces. They will fall to bottom. Gently stir occassionally. Will take 1-3 minutes to cook depending on size. Chicken will float to top when done. Add chicken broth to pot and bring up to a simmer. Add garlic and ginger and stir. Add cooking wine, soy sauce, salt if needed, white pepper and sugar. Stir and simmer for 3-4 minutes. Add onions, carrots and celery. Cook for 5 minutes or until onions translucent. Add broccoli and cook for a minute. Add yellow squash and cook for a minute. Add any additional broth if wanted or needed. Add chicken into pot, sesame oil and slurry a little at a time until sauce thickned to the consistancy that you like. Cook and stir until combined and sauce thickened. Add chopped green onions and stir one more time. Serve and enjoy.
