Amish Apple Butter Bread
INGREDIENTS:
3/4 cup apple butter
2 tsp cinnamon
1/2 teaspoon of cloves
1/4 teaspoon of nutmeg
1/4 teaspoon of ground ginger
1/2 cup apple cider (may substitute apple juice)
1/2 cup canola or vegetable oil
1 1/4 cup brown sugar (may substitue in part with maple sugar)
*Mix above ingredients together
Mix in well:
2 large eggs
Sift together and add to above mixture:
1 3/4 cup al purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
Pour in batter to well greased and floured loaf pan.
Bake at 350 degrees F for 50-60 minutes or until a toothpick stuck in middle comes out clean.
Remove from oven and let cool for 5 minutes then remove from the pan and continue to cool on wire rack.
ICING:
1/2 cup confectioners sugar
1 to 1 1/2 tbsp. apple cider
Add apple cider slowly and mix until smooth and thick consistancy.
Drizzle over bread generously.
