One Pan Oven Baked Chicken and Potatoes Dinner Recipe
INGREDIENTS:
3-5 pounds bone in chicken thighs
4 medium diced red potatoes
3 stalks diced celery
2 large diced carrots
leftover lemon slices
4-6 cloves sliced garlic
sprigs of fresh rosemary
olive oil
salt and black pepper
Marinade:
1 tsp. salt
1/2 tsp. black pepper
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. paprika
1/8 tsp. cayenne pepper - optional
2 tsp. sage
2 tsp. rosemary
1 tsp. thyme
1/2 cup olive oil
juice of 1/2 lemon
1 tbsp. Dijon mustard
*Marinate chicken for at least 6-8 hours...overnight is better.
Bake at 400 degrees Farenheit for 1 hour and 15 minutes or until
internal temp is 165degrees F
You may need to tent the top with foil partially through cooking
if the chicken skin is getting too brown.
